I got to cook kimchi soup for dinner tonight, and I think it turned out pretty well. I can't remember the last time I made this - I had switched to mostly sinigang and tinola in the months before the move. And tonight's version was the first time I decided to include some hotpot balls - one with seaweed and the other with cheese. I typically go for an all-mushroom version, but I thought this might be nice. Plus there's the constraint of our induction-friendly pot being a bit smaller than our previous one, so I had to tweak the amount of ingredients.
Soups are making quite the comeback in our diet because they're the perfect one-pot meal, really. Even in this summer heat, soups will always be comfort food. And beyond the initial prep, they're actually very straightforward to cook. It doesn't take much effort - just prepare ingredients, get them in the pot in the right sequence, boil, and move on.
I also have ingredients for sinigang for later this week. I'm already looking forward to it.
Work was productive. Some important meetings. A fair number of media-related items that I needed to address. And some HR stuff I'm still thinking about. I have other items I need to work on, and I can feel a bit of a time crunch. I'm blogging about it now as a reminder because I'll need to cover everything else tomorrow.
See, these blog posts have a purpose - mainly for me. Not so much for the potential reader, I suppose. Or we all walk away from the limited interaction of the blogging experience with different things.
