When you've been on a keto diet for as long as I have, you come to accept certain limitations to your diet. One of the big ones is a natural fear of sauces since they tend to contain secret sugars that are hard to account for when figuring out your macros. So we fry and bake a lot of things and I just enjoy them as is. The low hanging fruit is maybe dipping stuff into vinegar, but it's not like vinegar goes with everything.

Recently, I've rediscovered the joys of mustard - particularly rich brown mustard.

I know, I know - mustard can be a bit of an acquired taste. But as far as possible dips and sauces go, it has always provided a nice spicy kick, but mostly as a sandwich additive. And I have probably unconsciously limited its uses in this regard.

But mustard is a great addition to a lot of the roasted meat that Tobie prepares. If anything, I've always found it to be a particularly apt companion or pork products like sausages and more recently pork chops. And I swear, it's a rare treat to have something to dip my food into and not just rely on clear broth soups as the closest thing to a sauce that I can enjoy without measuring out how much I can enjoy. Sure there are things like mayonnaise, but how much mayonnaise can one consume? And it doesn't go with a lot of things. Salad dressing fits for salads, but more often than not I'm limited to like 2 tablespoons in order to avoid exceeding my gross carb limits for the day. 

So this is a happy rediscovery. I'm used to thinking of mustard for sandwiches and maybe sausages but like for main dishes for meals? It's sort of brilliant. My sister used to do this in Singapore but I guess enough time had passed that I had forgotten. It has helped to make meals a bit more interesting again. And given how we tend to repeat meals a lot because (1) keto and (2) mostly cooking at home as opposed to eating out because of the whole pandemic situation, any innovation or potential variation to the routine is a godsend.

Just wanted to share my happiness.
