0227C: Two Meals For One


Like most other folks in Metro Manila, Tobie and I spend between 3-5 hours total every day traveling to and from work. That doesn't leave us a lot of time to get the day-to-day stuff done and so we need to be smart about things.

I've written about our food challenges previously and how we seem to be ordering out way more than we're actually cooking meals, and that's a very bad thing indeed. I haven't made any progress is even trying longer term meal preparations and so I tried to do a bit more today. Combined with the benefits of home delivery groceries through MetroMart, maybe things can work out.

Tonight's drive home was majorly draining for Tobie and so I wanted to make sure that I handled dinner tonight. And the smarter option was to do something a little fire and forget, as it were. Sinigang is fun since despite all the prep work you ultimately just throw everything into a pot and let it boil.

In this case the easier option was to bake some chicken. I had to rush defrosting in the microwave and then quickly seasoned the thigh pieces we had left in the fridge. On the side I cooked some broccoli and cauliflower in place of rice and that went off well enough. But the extra time I had created by choosing to bake I invested in pressure cooking some beef for stew for tomorrow or Friday depending on how things go. It'll make for a good meal in place of either of us ordering out or whatever.

This felt good. And this tells me that maybe I can juggle cooking more than one meal in anticipation of the future or whatever. I just need to map things out better.
